Linda’s Keto Chili Rellenos

Keto version of the tasty Chili Rellenos

Ingredients
  

  • 1 pound ground beef
  • 1/2 white onion, chopped
  • 20 ounces canned whole green chilis
  • 3 cups shredded cheddar cheese
  • 4 eggs, beaten
  • 1 and 1/2 cups heavy cream
  • 1/4 cup almond flour
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

  • Preheat oven to 375.
  • Cook hamburger and onion, drain. Add cumin, slt and pepper.
  • Cut peppers in half lengthwise, and line bottom of casserole dish with them. Chop and reserve some to go on top.
  • In even layers, add meat, cheese, and chopped chilis.
  • Whisk eggs, heavy cream, and almond flour and pour evenly over the top.
  • Cook 35 to 40 minutes, or until eggs are set and top is slightly browning.

Notes

This can easily be halved for less people.
Leftovers can be stored in the refrigerator for up to one week, or frozen
